Ají paste is a concentrated paste, made from marinated or fresh yellow peppers. They are seeded, but not totally deveined, so our version is slightly spicy. It is the traditional ingredient of many dishes in Peruvian gastronomy such as aji de gallina or papa a la huancaina. It can be used as a base for cooking, seasoning and/or marinating meats or vegetables.
